Wild Garlic Chutney Recipe

A taste of seasonal wild Irish food

WILD GARLIC CHUTNEY
50g Wild Garlic leaves
100g Coriander leaves
2 green chillies, deseeded
A small piece of ginger
1 green apple, peeled and deseeded
Salt, to taste Juice of 1 lime
1 tsp sugar
1 tbsp olive oil
2 or 3 ice cubes

Preparation
- Blanch the wild garlic in salted boiling water for a few seconds. Drain and refresh in ice-cold water. Squeeze out of the excess water from wild garlic.
- Place all the ingredients in a blender along with ice cubes. Blend until the mixture is blended to a purée.
- Taste and add more seasoning, if necessary.
This chutney is also lovely mixed with Greek yoghurt.
